It comes from one flower, harvested once a year

Most honey is blended from thousands of paddocks and hundreds of flowers, so it all ends up tasting the same. Kunzea Honey comes from one: the white blossom of Kunzea Ambigua, a native shrub that flowers for a short window each spring in Tasmania. One flower, one harvest, one origin you can trace to the hive.

That single harvest gives it a smooth, buttery texture and a gentle sweetness you will not find in blended honey. When it is gone for the season, it is gone.

Supermarket honey is heated and heavily filtered so it pours fast and sits pretty on a shelf. Convenient for the supermarket. Terrible for the honey, because that processing strips out everything that makes it interesting.

Honey takes on everything around it: the air, the water, the flowers. Our hives sit in north-east Tasmania and on Flinders Island, surrounded by native bush rather than broadacre crops, where the air rolling in off the Southern Ocean is regularly measured among the cleanest in the world.

What does Kunzea Honey taste like?
Smooth and buttery with a delicate, refined sweetness. It is noticeably less sugary than blended supermarket honey, which is exactly why honey lovers rate it. Wildflower Honey is lighter and more floral, a great everyday jar for the whole family.
Why has my honey crystallised?
Because it is real. Raw, unprocessed honey naturally crystallises over time. To return it to liquid, sit the jar in warm water for about 15 minutes. Never heat honey above 40°C or you undo the benefit of it being raw.
Is it really raw?
Yes. Cold-extracted, unfiltered and never heated above hive temperature, with no added sugars, colourants or preservatives. Each variety is 100% Tasmanian honey and independently tested.
Can you ship it to me?
We ship Australia-wide from Melbourne and Brisbane, with free standard shipping on orders over $75 AUD. The exception: quarantine restrictions mean Tasmanian honey cannot be sent to Western Australia, Kangaroo Island or New Zealand.
Is it safe for kids?
Honey is not suitable for infants under 12 months. We also do not recommend it if you are allergic to bee stings, honey or bee-related products. For everyone else: drizzle away.
How should I store it?
In a cool, dry place away from direct sunlight. No fridge needed. Raw honey keeps beautifully; crystallising is a sign of purity, not a fault.
