Bergamot is cold pressed from the peel of Citrus bergamia, listed on the certificate of analysis as Citrus aurantium bergamia. Almost all of the world's supply comes from a narrow coastal strip of Calabria in southern Italy, where the combination of soil and sea climate suits it and where it has been grown for centuries. The aroma is sweet and fruity with a distinctly floral edge that separates it from every other citrus.
From bush to bottle
Bergamot is unusually place-dependent. The overwhelming majority of the world's crop grows along the Ionian coast of Calabria, and attempts to establish it elsewhere have generally produced a different, lesser oil. It is a citrus grown for peel alone; the fruit itself is too sour and bitter to eat.
The oil sits in glands in the rind. Cold pressing ruptures those glands mechanically and separates the oil without heat, which is why the aroma stays so close to the fresh fruit. Heat would flatten exactly the delicate floral notes that make bergamot worth having.
Nothing is added and nothing is blended in. The certificate of analysis for each batch records appearance, colour, odour, specific gravity and refractive index, along with Italy as both the country of origin and the country of extraction.
Most citrus oils are dominated by limonene and read as straightforward peel. Bergamot carries a large proportion of linalyl acetate and linalool alongside its limonene, and those are the same two compounds that give lavender much of its character.
That is the whole reason bergamot sits in a category of its own. It is a citrus with a floral heart, which is why perfumers use it as a bridge between fresh top notes and floral middles, and why it has anchored Earl Grey tea for two hundred years. Nothing else in the citrus family does the same job.

The Ionian coast of Calabria produces the overwhelming majority of the world's bergamot. It is one of the clearest examples in the whole cabinet of an oil that is tied to a specific place: grown elsewhere, the same species reliably yields a different and less interesting oil.
