Reason 1
Most honey is blended from thousands of paddocks and hundreds of flowers, so it all ends up tasting the same. Kunzea Honey comes from one: the white blossom of Kunzea Ambigua, a native shrub that flowers for a short window each spring in Tasmania. One flower, one harvest, one origin you can trace to the hive.
That single harvest gives it a smooth, buttery texture and a gentle sweetness you will not find in blended honey. When it is gone for the season, it is gone.

Supermarket honey is heated and heavily filtered so it pours fast and sits pretty on a shelf. Convenient for the supermarket. Terrible for the honey, because that processing strips out everything that makes it interesting.
